Recipe For the streusel topping:
1 ½ cups all-purpose flour
½ cup brown sugar
¼ cup granulated sugar
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon ground ginger
¼ teaspoon kosher salt
¾ cup unsalted butter, cold, cut into cubes
½ cup chopped pecans or walnuts (optional)
Recipe For the Filling:
4 large Granny Smith apples, peeled, cored, and cut into ½ inch chunks
4 large Bartlett pears, peeled, cored, and cut into ½ inch chunks
2 tablespoons lemon juice
½ cup granulated sugar
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon ground cinnamon
Recipe Instructions for Apple & Pear Crisp
Preheat oven to 350 degrees. For the streusel, combine the flour, sugars, salt, and spices in a medium mixing bowl. Cut in the butter with a pastry blender or the tines of a fork until the mixture resembles coarse sand. Stir in the chopped nuts if you are using them and set aside.
Toss the pieces of apple and pear in the lemon juice before adding the sugar, tossing to coat them evenly. Add in the spices and stir to combine. Spray a 8 x 8 inch square baking dish with nonstick spray before pouring the fruit mixture into the prepared pan. Sprinkle the streusel topping evenly over the fruit. Bake until the topping is golden brown and the fruit is starting to bubble through parts of the crust, around 45-50 minutes. Remove from oven and allow to cool slightly before serving with your favorite ice cream and caramel sauce.
Alternately, you can also bake the crisps in individual ramekins if you’d like. Using 8 ounce ramekins this recipe will yield 8 servings. Double the amount of crisp topping you’ll be using, and decrease the baking time to 35-40 minutes.
