Recipe: Flour-less Chocolate Cake by Mia Francesca Trattoria

Flour-less Chocolate Cake Recipe Ingredients:

Flourless Chocolate Cake

½ cup (1 stick) unsalted butter, cut into cubes

6 ounces good quality semisweet or bittersweet chocolate chips

5 large eggs, at room temperature

½ cup granulated sugar

½ teaspoon coarse kosher salt

2 teaspoons vanilla extract or flavored schnapps (raspberry, crème de cocoa, or crème de menthe work especially well)

¼ cup cocoa powder, sifted (Dutch-processed preferred)

 Flour-less Chocolate Cake Recipe Instructions

Preheat oven to 350 degrees.  Butter the sides and bottom of a 9 inch springform pan generously and set aside.

Fill a pot ¼ of the way with water and bring to a simmer over medium-high heat.  Place the chocolate chips and butter in a heatproof bowl; place over the simmering water and melt, stirring occasionally.

While the chocolate-butter mixture is melting, combine the eggs, sugar, and salt in the bowl of a stand mixer fitted with the whisk attachment.  Beat on high speed until the mixture is thick and pale yellow, about 10 minutes.  When ready the egg-sugar mixture will form a thick ribbon when the whisk is lifted from it.  Fold in the melted chocolate mix slowly, just until completely incorporated and making sure to not over-mix (over-mixing will cause the batter to lose its volume).  Gently fold in the cocoa powder.

Pour the batter into the prepared cake pan and bake until firm to the touch, about 25-30 minutes.  Let cool completely on the wire rack before transferring to the fridge to chill entirely, about 3-4 hours.  To unmold the cake: gently run a butter knife or offset spatula around the sides of the springform pan to loosen the cake from them.  Unlatch the springform sides and, should you so chose, serve directly from the springform base or warm the bottom over an electric heating element to loosen the cake and transfer to a serving platter.
