Good Times Always Mushroom Here in the Triangle

Monday, September 8th, 2014

CarpaccioDid you know that the month of September is National Mushroom Month? At Mia Francesca Trattoria in North Hills, our award winning kitchen, led by the reigning local Iron Chef, Zachary Van Gaasbeek places selected farm fresh mushrooms into several of our delicious gourmet Northern Italian meals.

Many guests start out their Tuscany Italian dining experience with our captivating Carpaccio appetizer, featuring thinly sliced sirloin using capers, tomatoes, mushrooms, lemon, olive oil, arugula, endive, radicchio, and Parmigiano. The name of this Italian dish has quite a history, coming about for the first time in Venice around 1950 during a special exhibition for the famous Venetian painter Vittore Carpaccio, who characteristically used red and white tones in his artwork.

Our very popular and palate pleasing Pollo e Pancetta presents pan-seared farm-fresh chicken breasts and roasted potatoes combined with a delicious pancetta mushroom Marsala sauce.

Our savory and unique Salmon Asparagi entrée features fresh grilled salmon, crab, wild mushrooms, asparagus, sundried tomatoes, white wine, garlic, balsamic, and lemon. Our fabulous Fettuccine con Mais offers fresh fettuccine pasta with fresh, local sweet corn, Prosciutto di Parma (dry cured ham), farm fresh mushrooms, cracked black pepper, and shaved Parmigiano Reggiano.

Mushrooms bring such wonderful flavor to a variety of dishes that everyone enjoys. One of our favorites is a Mia Francesca Trattoria classic suggestion that comes with fresh morel mushrooms. These special mushrooms have an intense, nutty, and earthy flavor that is absolutely heavenly when accompanied with our beef entrees. Our full-flavored Filetto con Spugnole is a special blend of grilled beef tenderloin, fresh morel mushrooms, spring onions, potatoes, grilled asparagus, and herb butter.

Because many varieties of mushrooms are cultivated all year round, we continue to place them in an array of new and delicious offerings that please every one of our visitors here in Midtown Raleigh. They are an excellent source of B vitamins and a good source of potassium. Finally, fresh mushrooms are a healthy, low-calorie food eaten cooked, raw, or served as a garnish to decorate a dish and platter. We love the value they bring to our Northern Italian presentations.

With our rustic atmosphere and our great service, Mia Francesca satisfies all of our guests with a true Italian experience. Bring family and friends to North Hills and enjoy the good times together. We are conveniently located, just 20 minutes from anywhere in the Triangle in North Hills, just off 440, adjacent to the landmark Renaissance hotel. If you want the freshest of ingredients, reasonable prices, and a comfortable and unique setting, stop in and visit us here in Midtown Raleigh. Let us take care of you!

Savor the Excellence of Italian Wines in the Triangle

Monday, July 21st, 2014

foodiesfeed.com_2014-DSC_0012Wine aficionados love our authentic Italian wine selection at Mia Francesca Trattoria. Our restaurant is focused on being the best Italian restaurant in the Triangle. The Northern Italian fare experienced is a favorite of everyone who visits our convenient location in the heart of Raleigh’s Midtown in North Hills. With respect to our appealing wines, we emphasize the top two wine classifications in Italian wine labeling: DOCG and DOC. We only serve the finest wines available and combine it with our locally and fresh grown gourmet cuisine.

Let’s discuss the two distinctive acronyms involving wine quality and labeling:

DOCG is really the abbreviation for “Demonimazione di Origine Controllata e Garantita” which translates from Italian as the highest quality first-class wines available. These superb wines must pass several taste tests before bottling. There are twenty DOCG wine regions in Italy:

  • Northeast—Veneto, Trentino-Alto Adige, and Friuli-Venezia
  • North and Northwest—Lombardy, Emilia-Romagna, Piedmont, Liguria, and Aosta Valley
  • Central—Tuscany, Lazio, Umbria, Marche, Abruzzo, and Molise
  • South—Campania, Basilicata, Puglia, Calabria, and the islands of Sicily and Sardinia

DOC is “Demonimazione di Origine Controllata” which translates to wines that are made grown based on the highest specific quality regulations. The Italian wine designations help to preserve the finest traditions unique to their respective regions. There are more than three-hundred DOC’s in Italy. As we all know, the country is famous for its beautiful and bountiful vineyards.

For trivia buffs, in Italy the name of each wine typically comes from the vineyard where it is harvested, but never the grape. At Mia Francesca Trattoria, our selective wine list is 100% pleasure and served with distinction. After your meal or appetizer in our bar, be sure to enjoy our heavenly desserts. We help make every guest have the warmest memories with each dining experience.

Do you have a large group? Our private dining areas accommodate for special events such as birthdays, wedding rehearsals, anniversaries, and bar/bat mitzvahs. For elegant fine dining in a rustic atmosphere, Mia Francesca Trattoria is the restaurant of choice in the Triangle. We welcome everyone to make a reservation and prepare to enjoy every moment!

Mia Francesca Trattoria Has The Iron Chef Champion Of Midtown Raleigh

Friday, October 4th, 2013
North Hills iron chef Zach cooking Rabbit

Chef Zach preparing his Rabbit dish. The rabbit was raised and provided by Walk Ahead Farms from Youngsville, NC

If you have ever watched the television show Iron Chef, you know that two chefs battle it out by cooking with the same required ingredient for all three different courses.  Well, The North Hills Farmers Market had it’s own Iron Chef competition in Midtown Raleigh on Saturday September 28.

Mia Francesca Trattoria, one of the five Raleigh area North Hills restaurants, competed.  The required announced ingredients (announced at 9 a.m.) were rabbit and green beans. The rabbit was provided by North Carolina farm – Walk Ahead Farms – who offers fresh eggs, pasture raised meats, seasonal produce, herbs, and cut flower arrangements to the Raleigh area. Using fifty dollars worth of Midtown Farmers Market bucks,” the four chefs purchased their fare; in a timed one hour period, all five chefs prepared two dishes containing the required ingredients.

Mia Francesca Trattoria Executive Chef Zachary VanGaasbeek was reportedly being very “mysterious” in his preparation. He wanted to truly surprise the judges. The competition had an official panel of five culinary adjudicators who (in addition to tasting it for themselves) took into consideration twenty-five very lucky market patrons who each tasted the second dish and gave their opinions. Who said this was easy?

The Judges:

The Competitors:

Chef Zach used the green beans to prepare a mixed green, fig, grilled eggplant, squash salad with Fig Vinaigrette. For the Rabbit he used local stone ground grits, sauteed swiss chard, tatsoi with hot chilies, and the pan grilled rabbit with a muscadine gastique.

Chef Zach won the competition for the Best Overall Dish. The crowd-pleasing entree was plated Grilled Rabbit over Grits.  Even if you missed this year’s Iron Chef Competition, you can always enjoy fine dining in our authentic Italian restaurant or take advantage of our private catering services.  Make sure you save room for our out-of-this-world desserts!

About Iron Chef Zach VanGaasbeekChef Zach VanGaasbeek

Chef Zach VanGaasbeek first discovered a desire for cooking at the young age of 14 while a dishwasher at a local restaurant in his home town of Kingston, N.Y.  A natural curiosity to understand flavour profiles and the chemistry of food, would soon fuel a desire for a career in culinary arts.

Chef Zach attended the Culinary Institute of America in Hyde Park, N.Y. and graduated with a Bachelors of Science in Hospitality management and associates in culinary arts.

After graduation he spent two years in the gulf coast of Florida working for a locally owned restaurant group Culinary Concepts.

He then moved on to Sonoma county, California, where he worked with private country clubs that focused exclusively on local California wines and “farm to fork” produce.  It was here garnered an affinity and respect for seasonality, terroir, and the use of micro-local ingredients.

Now in Raleigh, at Mia Francesca’s Trattoria in North Hills, an authentic Italian restaurant – part of Francesca’s Restaurant Group – Chef Zach showcases that early love affair of local fresh food with the wonderful rustic foods of Northern Italy & Tuscany.

Drop by for lunch or dinner and enjoy the best that the Iron Chef Champion can offer at Mia Francesca!

Italian White Wine Varietals Presented By Mia Francesca Trattoria

Monday, September 30th, 2013

Come to Mia Francesca Trattoria, located in Raleigh at North Hills, for the best authentic Italian cuisine.  We launched our Italian wine series recently with a brief history of winemaking and since followed it  by discussing the famous  Italian wine regions.  Last week we posted our most recent article on red wine varietals and this week we offer a review of Italian white wines from Mia Francesca’s wine list.

Although Italy is better known for its wonderful array of red wines, Italy’s white wines, especially Pinot Grigio, are very pleasant when compared to France, Germany, and Northern California. Tuscany, where our culinary roots come from, offers a very flavorful array of excellent white wines. The rich and sweet flavor of native Italian white grapes bring pleasure to the tables at Mia Francesca Trattoria and they go extremely well with our light seafood dishes, fresh salmon, and delicious desserts. Italian wine and our locally fresh food pairings make our dining experience a unique one. Of course, the finest Italian white wine is good all by itself, poured into a tall glass and savored with friends and family.

White Wine Varietals of Italy

Here are six excellent examples of white wines in the Italian White Wine Selection:

  • Chardonnay—described as the “king of white wines”; Chardonnay is easy-to-grow, versatile, and is planted throughout Italian White Wine Varietals Italy. It is also an important component of Champagne.
  • Pinot Grigio—comes from a large wine producing region in Northeastern Italy; grapes can vary widely in color from silvery blue to grayish violet to ashen yellow; when produced the wines are white to slightly pink in color; the taste is crisp, light, and dry.
  • Riesling—considered to be one of the world’s greatest white wine grapes; a balance of good acid and high sugar levels produces wines with considerable aging potential; taste is delicate, but complex as well as spicy, but fruity in flavor; a long finish.
  • Grechetto—grown in Italy’s Umbria region, delightfully rich and nutty in character.
  • Soave—Italy’s most popular dry white wine, located in the Western part of Italy’s Veneto area (east of Verona and around the town of Soave.)
  • Arneis—a white wine grape that originated and is primarily grown in the Roero hills of Italy’s Southern Piedmont; once nearly extinct, it has made a good comeback in recent years; it can produce very good wines with the fragrant characteristics of apples, pears, and a hint of licorice.

Remember our pairing principles include delicious foods and wonderful wines for our special guests. Our Monday wine specials make the start of the week as enjoyable as one can get with 50% off all wines from 11:30 a.m. until 11:00 p.m.

Mia Francesca Trattoria offers private dining options as well as quality catering in the Raleigh area.  Either way, you taste incredible authentic Italian cuisine while you make memories with family and friends.

Italian Wine Regions – Presented by Mia Francesca Trattoria

Tuesday, September 17th, 2013

Italian Wine Regions are vast, numerous, and delicious! Mia Francesca Trattoria is known throughout the Triangle as having one of the freshest menus in the Raleigh. Nestled in North Hills, our restaurant not only has the finest Italian fare in the Triangle area, but also includes the most complete wine list for your enjoyment; in fact, on Mondays all of our delicious wines are half price from 11:30 a.m. until 11:00 p.m.

In our new wine series that started last week, we discussed the history of Italian winemaking. Italy is indeed home to some of the oldest and most famous wine producing regions in the world.

This week our wine series centers on the quality and broad variety of Italian wine varietals.  The term “variety” refers to the particular Italian vine or grape, while “varietal” refers to the wine produced from a single group variety.  The wine label always displays the varietal name.  Because of the high quality standards of the European Union, a wine using a varietal label must contain at least 85% of that variety.  Our authentic Italian wine always contains 100% pure delight! Italian Wine Regions

It is very interesting to note that Italy has 20 distinct wine regions:

  • Northeast: Veneto, Trentino-South Tyrol, and Friuli-Venezia Giulia
  • North and Northwest: Lombardy, Emilia-Romagna, Piedmont, Liguria, and Aosta Valley
  • Central: Tuscany, Lazio, Umbria, Marche, Abruzzi, and Molise
  • South: Campania, Basilicata, Puglia, Calabria, and the islands of Sicily and Sardinia

Only the finest of the four different Italian wine classifications are labeled DOCG and DOC:

DOCG:

  • The term DOCG “Denominazione di Origine Controllata e Garantita” translates to mean the highest quality first-class wines available
  • These wines must pass a taste test before bottling
  • These are the 20 DOCG wine regions in Italy (listed above)

DOC:

  • The term DOC  “Denominazione di Origine Controllata” which means that these wines were made under specific quality regulations
  • The wine rules preserve the character of the wine unique to their Italian regions
  • Wines can be named for the vineyard they come from, but not the grape
  • There are more than 300 DOCs in Italy

As one of the largest producers of wine, Italy continues to set the stage for a continuous flow of unique and compelling wines that are enjoyed around the world. Luckily, you can find them right here in Raleigh.

Mia Francesca Trattoria offers only the most superior of wine selections. Our outside seating areas and warm and comfortable bar area give everyone choices. Our private dining areas are great for special events such as weddings, bar/bat mitzvahs, and intimate family gatherings.
