Pastas, Sauces, and Wines at Mia Francesca Trattoria in North Hills

Our award winning kitchen staff at Mia Francesca Trattoria always adds just the right sauces to our delicious farm to table lunch and dinner entrees. These sauces enhance the flavor of our fine foods and they blend perfectly with the meal to the delight of all our guests. For Tuscany Italian, sauces can truly define fresh food and are essential to our daily menu.  Everything from our finest homemade tomato sauce to our delicious marinades, we are noted for defining all of our sauces in very unique ways.

Let’s look at two of our special pasta dishes, each with distinctive sauces, and Justin Harkey, our General Manager, will recommend a wine that complements each one. Sauces play an important role in deciding the perfect wine pairing.

First, our very popular Spaghetti alla Bolognese features beef, veal, and pork as well as fresh herbs, tomato basil sauce, and Parmigiano Reggiano.  Red sauces always pair well with red wines.  We recommend our Cabernet Sauvignon, named after both the special grape and the wine it produces.  The primary taste of this excellent wine is a flavorful black current, but other overtones may include blackberry and mint.  Since Cabernets are very hearty and rich, this means they go best with our tomato-based sauces.  Mia Francesca Trattoria has four superb Cabernet Sauvignon wine selections for you to choose from every day.

Second, our delicious Pollo salsa Bianca features a farm-fresh grilled chicken breast, garlic, white wine, Alfredo cream sauce, Parmigiano, and linguini pasta. Pinot Grigio is a leaner style Italian white wine that pairs well with our cream sauces.  It has a smooth, almost silk-like flavor that leaves a wonderful impression with the most particular of connoisseurs. Mia Francesca offers two Pinot Grigio selections, both produced in the vineyards of Veneto, Italy: La Macine and Ca’ Stella.

Complete your dining experience with our chocolate sauce-covered dessert choice. Our guests love our Profiteroles, delicately toasted cream puffs filled with pistachio gelato.  They are drizzled with yummy chocolate sauce on top.  At Mia Francesca Trattoria, our pasta, sauce, and wine are just divine with or without our wonderful desserts.

Italian Wine Regions – Presented by Mia Francesca Trattoria

Italian Wine Regions are vast, numerous, and delicious! Mia Francesca Trattoria is known throughout the Triangle as having one of the freshest menus in the Raleigh. Nestled in North Hills, our restaurant not only has the finest Italian fare in the Triangle area, but also includes the most complete wine list for your enjoyment; in fact, on Mondays all of our delicious wines are half price from 11:30 a.m. until 11:00 p.m.

In our new wine series that started last week, we discussed the history of Italian winemaking. Italy is indeed home to some of the oldest and most famous wine producing regions in the world.

This week our wine series centers on the quality and broad variety of Italian wine varietals.  The term “variety” refers to the particular Italian vine or grape, while “varietal” refers to the wine produced from a single group variety.  The wine label always displays the varietal name.  Because of the high quality standards of the European Union, a wine using a varietal label must contain at least 85% of that variety.  Our authentic Italian wine always contains 100% pure delight! Italian Wine Regions

It is very interesting to note that Italy has 20 distinct wine regions:

  • Northeast: Veneto, Trentino-South Tyrol, and Friuli-Venezia Giulia
  • North and Northwest: Lombardy, Emilia-Romagna, Piedmont, Liguria, and Aosta Valley
  • Central: Tuscany, Lazio, Umbria, Marche, Abruzzi, and Molise
  • South: Campania, Basilicata, Puglia, Calabria, and the islands of Sicily and Sardinia

Only the finest of the four different Italian wine classifications are labeled DOCG and DOC:

DOCG:

  • The term DOCG “Denominazione di Origine Controllata e Garantita” translates to mean the highest quality first-class wines available
  • These wines must pass a taste test before bottling
  • These are the 20 DOCG wine regions in Italy (listed above)

DOC:

  • The term DOC  “Denominazione di Origine Controllata” which means that these wines were made under specific quality regulations
  • The wine rules preserve the character of the wine unique to their Italian regions
  • Wines can be named for the vineyard they come from, but not the grape
  • There are more than 300 DOCs in Italy

As one of the largest producers of wine, Italy continues to set the stage for a continuous flow of unique and compelling wines that are enjoyed around the world. Luckily, you can find them right here in Raleigh.
